Hafod Cheese

Description

Hafod cheddar is handmade in small quantities using just the milk from our small herd of Ayrshire cows. Grazing on the organic pastures of our hilltop farm in West Wales, their milk is sweet and rich.

Inspired by the long forgotten cheddar making techniques of the early 20th century, we have developed a new slower, cooler recipe for Hafod. Under the guidance of Dora Saker’s 1917 book, ‘Practical Cheddar Cheese-making’, we have pieced together how cheddar used to be made. The resulting cheese has a softer, yet springy texture. The flavour is deep, mellow, rich with butter, and with a hint of sharpness.

Hafod is available nationwide at selected delicatessens, cheesemongers, shops, hotels, cafes and restaurants, also selected branches of Waitrose.
