Euro-Toques Ireland


Euro-Toques is a European organisation of chefs and professional cooks set up in 1986 to defend the quality of food in Europe and protect the culinary heritage and traditions of the European countries. Euro-Toques Ireland was founded by Myrtle Allen of Ballymaloe House in Co. Cork and now has about 180 head chef members in restaurants, hotel, cookery schools and caterers around the country.

Member chefs must meet strict criteria and abide by the Euro-Toques charter. Central to their philosophy is local and seasonal sourcing; they are asked to support their local farmers, fishermen and food producers and ensure that they source the best quality ingredients available. Euro-toques seeks to
promote traditional cooking skills and methods; both amongst chefs and the public. Euro-Toques chefs source their ingredients in the most basic unprocessed form and do the work themselves. The sourcing and cooking policy is all about being able to be totally transparent with the customer and being able to pass on the full story of how the food has reached the plate and what has gone in to it.
